Strawberry Shortcake

Ingredients:

  • Dry Ingredients:
    • 1 cup (250 ml) all-purpose flour
    • 1.5 ml baking powder
    • 1/4 tsp salt
  • Eggs & Meringue:
    • 3 large eggs, separated
    • 1/4 tsp cream of tartar
    • 1.5 cups (310 ml) sugar, divided
  • Wet Ingredients:
    • 1/2 cup (125 ml) unsalted butter, softened
    • 1 tsp vanilla extract
    • 1/2 cup (125 ml) milk
  • Strawberry-Vanilla Topping:
    • 2/3 cup (375 ml) fresh strawberries, sliced
    • 1/4 cup (15 ml) sugar
    • 1 vanilla bean, split and seeds scraped
  • Whipped Cream:
    • 3/4 cup (375 ml) heavy cream
    • 1 tsp vanilla extract
    • 3/4 cup (45 ml) sugar

Instructions:

Step 1: Preheat and Prepare the Pan

  1. Preheat the oven to 180°C (350°F). Position the rack in the center.
  2. Grease a 20-cm (8-inch) springform pan, line the bottom with parchment paper, and set aside.

Step 2: Prepare the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3: Make the Meringue

  1. In a separate bowl, beat egg whites with cream of tartar until soft peaks form.
  2. Gradually add 1/2 cup of sugar, beating until stiff peaks form. Set aside.

Step 4: Cream the Butter and Sugar

  1. In another bowl, beat softened butter with the remaining sugar, egg yolks, and vanilla extract until light and fluffy.

Step 5: Combine Ingredients

  1. Alternate adding the flour mixture and milk to the butter mixture, beginning and ending with the dry ingredients.
  2. Gently fold in 1/4 of the meringue to lighten the batter, then carefully fold in the remaining meringue.

Step 6: Bake

  1. Pour the batter into the prepared pan.
  2. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean.
  3. Let the cake cool completely on a wire rack.

Step 7: Prepare Strawberry Topping

  1. Place the sliced strawberries, 1/4 cup sugar, vanilla seeds, and pod in a bowl. Let macerate for 15 minutes. Remove vanilla pod before using.

Step 8: Whip the Cream

  1. In a separate bowl, beat heavy cream, sugar, and vanilla extract until stiff peaks form.

Step 9: Assemble the Cake

  1. Slice the cooled cake horizontally into two layers.
  2. Spread 1 cup of whipped cream on the bottom layer and top with half the strawberries.
  3. Place the second layer on top, add the remaining whipped cream, and garnish with fresh strawberries.
