  2. Grease a 9×13-inch baking dish.

Step 2: Prepare the Meat Filling

  1. In a large skillet over medium heat, cook ground beef or turkey until browned. Drain excess fat.
  2. Add taco seasoning according to package instructions, typically adding a small amount of water.
  3. Stir in black beans, corn, diced tomatoes with chilies, salsa, and chopped onion.
  4. Let the mixture simmer for 5-7 minutes until combined and heated through.

Step 3: Assemble the Taco Lasagna

  1. Place a layer of tortillas on the bottom of the prepared baking dish.
  2. Spread half of the meat mixture over the tortillas.
  3. Add dollops of sour cream and sprinkle with a layer of shredded cheese.
  4. Add another layer of tortillas, the remaining meat mixture, more sour cream, and more cheese.
  5. For added flavor, pour enchilada sauce over the top layer.

Step 4: Bake

  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil, add an additional layer of cheese on top, and bake for another 10 minutes until the cheese is melted and bubbly.

Step 5: Garnish and Serve

  1. Let the lasagna cool for 5-10 minutes before slicing.
  2. Garnish with fresh cilantro, and serve with extra sour cream, salsa, guacamole, or your favorite taco toppings.

Tips:

  • Variations: Substitute ground beef with ground chicken or make it vegetarian by using extra beans and veggies.
  • Spicy Twist: Add jalapeños or a spicy salsa for extra heat.
  • Serve with Sides: Pair with tortilla chips and a side salad for a full fiesta experience.
